  1. Bonsai trees and bamboo
  2. What climate are you in? Cannot advise unless we know climate. Thanks,
  3. ivies and pachasandra will do well in shade. and look nice in Japanese garden. be advised though, both of these plants can be invasive. these plants will do well in all grow zones, but like stated in another response we can't help you more if we don't know your climate. You can make certain species of junipers to grow bonsaii like. contored filbert trees, japanese maples, dogwoods and weeping cherry trees (all of these stay small in height not more than 12 feet.) look especially nice in a japanese garden. Look for lace leaf jap. maples, they look dainty and don't require alot of sun. If jap maples get too much sun, their leaves will have a greenish cast to them instead of burgandy. This is a start.
  4. You neglected to mention your climate. In colder climates, try the following fact sheet.
