Best Heirloom Vegetables for Fresh Eating, Canning, Freezing?

I'd like to move away from the GMO/Hybrid vegetables (seeds) in my garden but am having a difficult time finding heirlooms w/great fresh taste as well as are good for canning and freezing. Trying to also find a petite (skinny) green bean that tastes as good, does as well for canning/freezing too. Would appreciate help from those knowledgeable about Heirloom varieties specifically. Thank You

I can't answer your entire question, but I have found that in the past I was not a big fan or Heirloom tomatoes, but last year I blanched them and froze them and they made excellent sauce and stews. I also like my Heirloom Cilantro, I let it go to seed and like to let my plants go to seed to reduce cost. As for beans I like the haricot vert but have not liked any beans frozen.   2. Unfortunately that is the reason most heirloom varieties are what they are. They tend to have one strong point, but the weaknesses let them down. I have grown a number of heirloom varieties, and they tend to taste good, but last almost no time at all. Oh and for canning and freezing, you need low water content plants, so look for those.
  3. We have grown only heirloom varieties for the last 9 years and have had good luck with heirloom seeds from Baker Creek. Their Blue Lake variety green beans have been excellent for canning and dehydrating, as well as great tasting (IMHO). We don't generally freeze our produce, so I can't really help you with that.
